About Lilly’s Cantina

Lilly’s Cantina is a gourmet catering company and food truck.

Lilly’s Cantina has been providing excellent service in Columbia, Missouri since 2014. We specialize in traditional Mexican street food – with a gourmet edge. We showcase our culinary delights with a clean and modern food truck which is designed for any type of social event: including birthday parties, corporate events, or anything in between! We are sure to dazzle your guests with our made-to-order dishes, homemade salsas, and outstanding side dishes.

Lilly’s Cantina offers a variety of meat choices such as beef, carnitas, chicken, fish, shrimp, and lobster. We also offer vegetarian, meat-free selections such as grilled vegetables that can be included in any of our menu items. Every plate we prepare includes fresh flour or corn tortillas, legendary salsas, and fresh accompaniments of shredded cheese, diced onions, lemony cilantro, specialty cheese, citrusy limes, and ripe tomatoes.

Additionally, our food truck operates independent of any power source, so there is no need for any electric plugs or extension cords. This makes Lilly’s Cantina ideal for catering to your next picnic at the park, on-site corporate event, birthday party – you name it! By helping you out with the cooking, Lilly’s Cantina lets you spend valuable time socializing with friends, family, or business associates.

Street food is a passion that’s cultivated over time and lives in the embodiment of the search.

George Nickols

Co-owner and operator/Chef

Lilly’s Cantina was inspired by my daughter, Lilly, and is Co-Owned with Molly Jacks. The menu inspiration has come from my many years of living in Southern California. Street food is a passion that’s cultivated over time and lives in the embodiment of the search! My ultimate goal is to make the tastiest, and best-looking street food for the people of Mid-Missouri, Columbia in particular. We treat everyone like family at Lilly’s Cantina.

I love this industry, anywhere I’m cooking, I’m home.

Chris Jones

Chef

I’ve been in restaurants for 10 years. My favorite part of working on the food truck is how George and Donnie treat me like family. My job at Lilly’s is to make sure the truck is loaded up and ready for the day. I make and prepare all the cold food which includes fresh pico de gallo, guacamole, and all the other delicious sauces and toppings that go on your order. I love this industry. Anywhere I’m cooking, i’m home.

It’s always fun, and I get to work with some of the best people.

Lilly Jacks

I love working on the truck because I enjoy the people I get to meet at events. It’s always fun, and I get to work with some of the best people. I also enjoy the free food.
